Today I forgot to order my kids their lunch from the tuckshop….
It’s ok, I know, I’m a terrible mum. Or at least in my head I am, mumma guilt is hitting hard!
You’re probably thinking, how on earth do you forget your kid’s lunch?! To be honest, I don’t even know… What I do know is that in the midst of the weekly juggle, ordering their lunch completely slipped my mind.
The Friday tuckshop order has become a bit of a habit. It’s partly for them and partly for me. It gives me a break from lunchbox packing and it gives them a treat.
Today, I forgot to put the order in and did not give it another thought all day. Until I picked my boys up from school and the first thing they said was, “hey mum, thanks for forgetting my lunch.” My heart literally sank, how the hell did I forget?! Thank goodness for the tuckshop IOU!! It’s not like they starved, but stil…
So tonight I am cooking my boys favourite, spaghetti bolognese. It’s quick and easy to make, it’s healthy and they love it. My recipe has a secret ingredient that gives it an amazing depth of flavour. I hope you love it.
Hopefully, instead of my boys remembering the time that mum forgot to order their lunch, they will remember mum cooking them their favourite meal. Here’s hoping right? Xo
1 x brown onion
1 x tbs extra virgin olive oil
2 x cloves garlic
1 x zucchini (grated)
1 x carrot (grated)
Handful baby spinach
mushrooms, capsicum etc (optional)
500gm organic beef mince
700gms organic tomato passata
1 drop oregano essential oil
1 drop basil essential oil
Heat oil in fry pan and add onion & garlic.
Add mince and fry until lightly cooked. Add grated vegetables, fry for approx 5 mins. Then add the passata and cook on low for approx 20 minutes. Remove from heat and very carefully add 1 drop of each essential oil and stir well to combine.
Be super careful to make sure you only add 1 drop of each essential oil. Any more and you could ruin it!. I add a drop to a teaspoon and then add it to the sauce or you could use a toothpick.

Serve with your choice of gluten-free or buckwheat pasta or zoodles, (zucchini noodles.)
Tip – cook up a double batch and freeze half to have on a night that you get home late from after-school activities, or when you just can’t be bothered.
