Breakfast can be one of the hardest things to change when you are trying to improve your family’s diet. It’s so easy to head to the cereal aisle but honestly, the majority of breakfast cereals are not really fit for human consumption! I may be exaggerating slightly but they are definitely not the healthy option they claim to be.

If you are on the lookout for a healthy, simple breakfast option that doesn’t consist of toast or sugary cereal, you have come to the right place. Prep this on the weekend and you will be sorted for the week!

The mix of roasted nuts, seeds and spices is delicious without the need for additional sweetener. Sprinkle over coconut yogurt and top with your choice of fruit. (Strawberries, blueberries, banana.) This is perfect for breakfast or an afternoon tea snack for the kids. My boys love it! Let me know what you think x

 

 

 Ingredients

1 x cup raw nuts (almonds, cashews etc. roughly chopped)

½ cup sesame seeds

½ cup pepitas

½ cup sunflower seeds

½ cup coconut flakes (purchase preservative free shredded coconut here)

¼ cup chia seeds (purchase here)

½ tsp cinnamon (purchase here)

1 tsp vanilla

¼ cup water

1 x tbs coconut oil (purchase here)

 

Method

Preheat oven to 180c

Mix roughly chopped nuts, seeds and cinnamon in a large bowl. Pour water and coconut oil over nut & seed mix. Stir well to combine and let sit for 15 mins.

Bake in the oven for 15- 20 mins. Check and shake pan after 10 mins. Keep an eye on it as it can burn quickly. Leave on the bench to cool and store in the pantry in a glass jar.
