Packing the kids lunchbox can be a serious drag, am I right?! With a little bit of planning, we can make the whole process a lot more stress-free. By having food pre-prepared in the fridge, you can remove the decision making part of what to pack each morning.

Coming up with food ideas to pack in my boys’ lunchbox can be really difficult! If your kids are anything like mine, they don’t want to sit down to a meal, they need something quick they can grab and eat on the way to the playground. They can’t miss any precious minutes of playtime!

These mini paleo bacon & zucchini frittatas are quick and easy to make, freeze well and my boys love them. Change up the ingredients to suit what you have in the fridge and what you think your kids will eat. 

 

Ingredients

6 x free-range or organic eggs

2 x small zucchinis – grated

1/2 cup almond meal

100g nitrate-free bacon or ham – diced

1 x tbs nutritional yeast flakes

 

Method

Preheat oven to 180c.

Add all ingredients to a bowl and mix well.

Add mixture to mini muffin silicon trays and bake for 15-20mins.

 

Notes

Can be made in large muffin trays, increase cooking time to 25mins.

For a vegetarian option, leave out bacon/ham and use fetta cheese instead. Yum!
